cookie calendar - day 17: minty Andes peppermint crunch dark chocolate chip cookies

Stephanie and I have a lot in common (besides our name) but she'll fill you in on that. We've moved our chats off of Twitter (after all, what can you really discuss in depth in 140 characters when you have so much to talk about?) and onto email and although she's SUPER busy, she was kind enough to do some baking for me and has shared this recipe with all of us.

What else can I add except that she's a lot of fun and her blog makes me hungry - really, really hungry!

When Stephanie asked if I wanted to join her Cookie Advent Calendar for the holidays this year, I was delighted!  I was super excited and immediately started brainstorming different cookie combinations.  

But let me backtrack a little...  For those that don’t know me, I’m Stephanie from Munch I Munch.  Originally from New York/New Jersey, I recently moved to Salt Lake City UT.  I love to dabble with food around in my kitchen, but I especially love to eat out locally at home or while travelling.  There’s something quite satisfying about finding that hole in the wall place that serves amazing food.  ^_^

Stephanie and I bonded over our mutual love for food (we are food bloggers, aren’t we?), books (initially of the Tudor and Elizabethan era), and television shows (you guessed it, The Tudors as well as Game of Thrones) and of course, our perfectly awesome name.  ;)  

Now, onto the cookies!


Like I was said, I was super excited so I went to the grocery store the following weekend.  As soon as I saw Andes Peppermint Crunch Baking Chips in the baking aisle, I picked up a few bags and started experimenting.  These cookies were the outcome!    

Dark chocolate and mint has got to be my most favorite flavor combinations of all time!  So far, I’ve baked two batches for my classmates, two batches for The Great Food Blogger Cookies Swap 2012, and a whole batch just for myself.  ^_^

If dark chocolate and mint is a combination for you, I dare you to give these cookies a try!  You won’t be disappointed.

minty Andes peppermint crunch dark chocolate chip cookies

ingredients:



2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup (2 sticks, 1/2 pound) butter, softened
3/4 cup packed brown sugar
1/4 cup granulated (white) sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon peppermint extract
1 cup Andes Peppermint Crunch Baking Chips
1 cup Nestle Toll House Dark Chocolate Morsels

directions:



1. Preheat the oven to 350 ° F.

2. Combine flour, baking soda, baking powder and salt in small bowl. 

3. Cream the butter, brown sugar and granulated sugar in large mixer bowl. 

4. Add the egg, vanilla, and peppermint extracts and mix well.  

5. Gradually beat in the flour mixture.

6. Stir in the Andes Peppermint Crunch Baking Chips and Nestle Toll House Dark Chocolate Morsels until well distributed. 

7. Drop by rounded tablespoon onto greased baking sheets.

8. Bake for 8-10 minutes or until golden brown.

9. Allow to cool for 2 minutes before removing to wire racks to cool completely.


yields: approximately 3 1/2 dozen cookies
